Sometimes it is the other way around where their favorite song would have elements that would lend to a certain type of instrumentation.
The location, theme and logistics of the event could also influence music selection and choice of an ensemble.

Violin or Saxophone? A True Story.
I recall a daughter and her family planning music for their parents wedding anniversary celebration; live music was part of the surprise. They said that their parents liked Piano music and also liked Big Band music but that they also liked the Violin and Classical Music. Since they budgeted for “a duo” I suggested Sax and Piano or Violin and Piano. As it turns out it was an intimate location with a relatively low ceiling and I felt that Sax might be too loud for that room.
